2 Fermentation process: The fruit enzyme is fermented by traditional techniques. The fermentation process is basically divided into three stages: yeast fermentation, acetic acid fermentation and lactic acid fermentation.

The first Stage: Yeast fermentation: The yeast fermentation stage breaks down macromolecules into small molecules, which break down starch into carbon dioxide and alcohol, also called saccharification.

The second stage: fermentation of acetic acid bacteria: the fermentation stage of acetic acid bacteria decomposes alcohol, this stage is also called vinegarization.

The third stage: lactic acid bacteria fermentation: lactic acid bacteria fermentation stage produces probiotics under the action of ruminant, this stage is also called ripening effect.
